The first thought on your mind when you hear “Fresh Lemon and Rosemary Soda” might be EWWWW Really? However, I can assure you, this is truly a winner! The rosemary is a soft undertone to the tart lemon flavor and the added honey balances everything out.

Making soda from scratch requires you to first make a thick sugary syrup. That syrup is then mixed with sparkling soda water to give you the final product. In this case, you will use 2 tablespoons of syrup to every cup of soda water. After cooking down you will get roughly enough syrup for a 2 liter of soda.

- 1 Cup Freshly Squeezed Lemon Juice (4-6 Lemons)
- ¾ Cup Sugar
- ¼ Cup Honey
- ⅛ Cup Fresh Rosemary
- Zest from 2 Lemons
- Soda Water
- In a medium saucepan add the zest from 2 lemons, the lemon juice, the sugar, honey and rosemary.
- Cook on medium-high for 6-10 minutes until the mixture thickens into a syrup with the consistency of honey.
- Add 2 Tablespoons of soda syrup to each cup of soda water.
