Goat Cheese and Sun-Dried Tomato Baguettes

Fresh rosemary, mint and thyme coated goat cheese on top of sun-dried tomatoes and toasted baguettes.

Ingredients
  • 12 Sun-Dried Tomatoes
  • 1 Baguette
  • 4 Oz Goat Cheese
  • 1 Tablespoon Fresh Mint (Chopped Finely)
  • 1 Tablespoon Fresh Rosemary (Chopped Finely)
  • 1 Tablespoon Fresh Thyme (Chopped Finely)
  • 2 Teaspoons Salt
  • 2 Teaspoons Pepper
  • 2 Tablespoons Olive Oil
Directions
  1. Preheat oven to 350 degrees.
  2. Cut a baguette roll into 12 pieces. (Cut diagonally in order to maximize surface area of the bread).
  3. Brush both sides of each baguette piece with the olive oil and place on a baking sheet.
  4. Sprinkle salt and pepper on top side of baguettes.
  5. Bake baguettes in oven for 10 minutes, remove and set aside.
  6. Lower oven temperature to 300 degrees.
  7. Chop the fresh mint, rosemary and thyme and mix together.
  8. Roll the goat cheese so that it is evenly coated with all the herbs.
  9. Top each baguette with a sun-dried tomato.
  10. Spread an equal amount of herb coated goat cheese atop each sun-dried tomato baguette.
  11. Place the baguettes back in the oven for 8-10 minutes.
  12. Remove, drizzle with olive oil and serve immediately.
