Homemade Bacon Blue Cheese Tater Tots

Serves: 10 tots
- 2 Large Russet Potatoes (peeled)
- 2 Tablespoons Flour
- 2 Cloves Fresh Garlic (chopped finely)
- 1 Teaspoon Salt
- ½ Teaspoon Pepper
- 6 Slices of Bacon
- 10 Teaspoons Blue Cheese
- Oil for Frying
- Preheat Oven to 400 degrees.
- Cook bacon for 10 minutes until crisp, allow cool and then chop.
- Peel potatoes and add to a pot of water. Boil for 6-7 minutes until parboiled.
- Allow potatoes to dry and cool and then shred them finely with a cheese grater.
- Mix flour, salt, pepper and chopped garlic and chopped bacon into the potatoes mixture.
- Assemble the potato mixture into large tots, stuff each tot with 1 t of blue cheese.
- Heat oil in a fry pot to 350 degrees.
- Fry each tot for 3-4 minutes until golden brown and crispy on the outside.
